You will need:
● 1 c cashews
● 1/4 c raw cocoa powder
● 1 tsp vanilla
● 2 tsp agave
● 3/4 c water
● 2 Tb melted coconut oil
● Rice Chex cereal
● 2 c melted non-dairy chocolate
A. Place all but the last two ingredients in a blender. Blend until smooth, then put in the refrigerator to chill.
B. Line an 8×8 glass baking pan with a thin layer of the melted chocolate.
C. Like the chocolate with individual pieces of Chex, until covered.
D. Cover the Chex with the mixture from the refrigerator. Smooth the top and freeze for twenty minutes.
E. Add another layer of Chex, then another layer of chocolate.
F. Freeze until not quite hard, cut into squares, dip in remainder of melted chocolate to coat the sides, then freeze until hard. Enjoy.
2. Vegan Peppermint Patties
If you like traditional Peppermint Patties, you’ll love this vegan version you can make yourself.
● 1 c. shredded coconut (unsweetened)
● 3 tsp coconut oil, melted (use refined for less of a coconut flavor)
● 2 tsp. maple syrup
● 1 tsp. nondairy milk
● 1 tsp. peppermint extract
● 1/2 c. nondairy chocolate, melted
1. Soak coconut in water for ten minutes to soften, then drain.
2. Blend coconut, maple syrup, coconut oil, and nondairy milk in a high speed blender until smooth. Add more non-dairy milk as needed to make it smooth, then add peppermint extract.
3. Make coconut into small patties with your hands, put on waxed paper, and freeze for twenty-five minutes.
4. After freezing, use a fork to dip each patty into the melted chocolate. Make sure both sides get coated.
5. Put the patties back on the waxed paper and freeze for ten minutes, to fully harden the chocolate. Enjoy.
